EASY, DELICIOUS AND CRISPY
Today begins a new blog segment, this time a very helpful one that will bring quick and easy tips to help you in the kitchen, in the garden, in your daily life in general. It can be a recipe, a DIY, cleaning tips, beauty tricks, anything, as long as it’s easy and useful.
So the first tip that I will share with you it’s about pumpkins, more precisely pumpkin seeds! On this season, pumpkins are everywhere, there are plenty of this gorgeous and giant fruit (yes, it seems pumpkin is a fruit and not a vegetable), and we use it to make a lot of things, from soups, to cakes, to pies, even to decoration… But every time we use a pumpkin, there is something that generally ends up in the trash. We should avoid waste as much as we can, and if we can eat our vegetables or fruits from the peel to the seeds the better. Pumpkin seeds are so popular and their health benefits well known, pack with healthy fats, magnesium, iron, phosphorus, manganese and antioxidants it’s a great ally for our health and we definitely should eat this little treasures every day.
I will share with you an easy way to roast the leftover seeds from your pumpkins, and turn them into a delicious salty snack that you can eat just like this or add into your soups or salads…
All you gonna need is the leftover pumpkin seeds, some salt, paprika and a little bit of olive oil.

Start by washing the seeds in a big bowl with water. You need to have the seeds well clean, with no squash left in them. Rinse the seeds under cold running water, this will help you to remove the little strands that still remain. Once that done, clean them very well with a towel and let them dry a little inside the towel (it’s important that they lose as much moisture as possible to get crispy faster in the oven).
Then toss the seeds on a baking tray previously lined with parchment paper, drizzle some olive oil, add some salt and paprika, and mix well to spread the seasonings evenly in the seeds. You can add the spices you prefer, this is just a suggestion.
Spread the seeds evenly in a single layer, put them in the oven (preheated at 180°C) and bake them for about 60min. Stir and toss the seeds occasionally to prevent them from burn. Once you remove the seeds from the oven let them cool completely and then place in an airtight container.
There you have it, your roasted pumpkin seeds, homemade, delicious and crispy!!!
