NOTHING BUT ALMONDS

I love nuts and there are so many things you can do with them. Over the years, we learned that we can make milk with nuts, cheeses, creams, sauces, flour, etc…

 

But the use of nuts in cooking is not exactly a new thing, particularly almonds. 

 

From Greek mythology to the Bible, everyone mentions the almond. Originally from West and Central Asia, almonds have been “domesticated” around the fourth millennium BC, or possibly even earlier.

 

Before this domestication process took place, almonds contained deadly levels of cyanide and were extremely bitter to humans. It took a natural mutation of the almond itself for it to become sweet and safe for human consumption and then started to become a very popular and appreciated food in the Middle East. 

 

By the first millennium BC almonds began to spread throughout Greece, becoming a super important ingredient used to treat various diseases and also as an aphrodisiac.

 

From the end of the first millennium, almonds began to be marketed all over the Mediterranean, particularly in Italy, Spain, and of course, Portugal. 

 

Its gastronomic applications did not take long to happen due to its flavor and versatility. In Portugal, for example, traditional and conventual sweets are full of almond recipes.

 

All this context to tell you that yes, almond is a passion not only in Portugal but all over the world and recipes made with this ingredient are always special and full of symbolism.

This Almond Mini Cakes recipe comes about because I’ve always loved traditional sweets loaded with almonds. They have always been my favorites due to their density, texture and obviously flavor!

 

You know those simple, almost rustic cakes that are so simple and so rustic that they become irresistible? That’s what I wanted to bring you. No elaborate decorations, no s%&$s… 

 

The base of these cakes is almond, OBVIOUS! I used almond, almond milk and even almond flour.

 

About the almond flour I used, the one I chose was from Dragon SuperFoods. I’ve used it in many different recipes and I’m a big fan. It has a fine, light texture, which always results in cakes that are also light and full of flavor. This flour is 100% organic almond flour, with no other ingredients added. I wouldn’t trade this flour for any other precisely because of its super fine texture. 

 

You don’t need any special cooking skills to make this recipe. Just mix all the ingredients, put it in individual little forms, take it to the oven and done! At the end, for an extra charm, sprinkle the cakes with powdered sugar and tcharaaaan, we have cakes that no one will say no to!

Ingredients:

1 cup (115gr) of Dragon SuperFoods Almond Flour

1 cup (120gr) of whole spelt flour

1 cup (110gr) of coarsely ground almonds

2 tsp of baking powder

1 coffee spoon of turmeric

1 cup (140gr) of brown sugar

2 tbsp ground flaxseed

2 tbsp of port wine

1/2 cup (120gr) of unsweetened almond milk

50g melted vegan butter 

Ingredients:

1 cup (115gr) of Dragon SuperFoods Almond Flour

1 cup (120gr) of whole spelt flour

1 cup (110gr) of coarsely ground almonds

2 tsp of baking powder

1 coffee spoon of turmeric

1 cup (140gr) of brown sugar

2 tbsp ground flaxseed

2 tbsp of port wine

1/2 cup (120gr) of unsweetened almond milk

50g melted vegan butter 

Instructions:

1- Preheat the oven to 180°C.

 

2- In a bowl, place all the dry ingredients and mix with a spatula.

 

3- Then, add the port wine, the almond milk and the melted butter and mix again until you get a uniform dough.

 

4- Grease 8 individual little forms with butter, and divide the cake dough for each of them.

 

5- Bake it for about 25 minutes or until you insert a toothpick and it comes out clean.

 

6- Remove from oven, let cool for about 15 minutes and carefully unmold.

 

7- Let it cool completely and sprinkle generously with powdered sugar when serving.
