A MASTERPIECE

Who in the world doesn´t love pizza???? Some people like it with cheese, some without cheese, some with oregano others without, some like it with fruit, others hate, the options are countless and this is what makes pizza such a democratic dish loved by everyone.

We will probably never know the name of the first person to combine and serve tomatoes, cheese and flat bread. References to Neapolitan-style pizza surface in English print in the mid-19th century.”

 

We all think pizza was invented by the Italians, but probably not, but we can´t deny that it was them who transformed a simple flat bread with tomato and cheese into a loved dish that nobody can resist.

“The earliest pizza prototypes originated when Neolithic tribes first gathered wild grains, made them into a crude batter, and cooked them on the hot stones of their campfires…Italians may have made pizza famous, but they certainly did not invent the concept of the dish…”

 

Thousands, if not millions, of variations have been created worldwide (probably there is someone creating another one right now!), because it´s easy to recreate a pizza and add in the ingredients that we prefer, the ingredients there are most used on our country, on our region… And it´s also fun to make a pizza, knead the dough, add the tomato sauce and all the ingredients that we choose.  In the end we are proud to see the beauty we have made with our own hands, and little to no effort, right?

 

You’re probably sick of seeing pizza recipes but let me warning you, the one i will share with you right now, is far beyond everything that you already have seen. It´s the masterpiece! (no modesty) When I mentally created the recipe, I was already salivating just imagining the final taste!

THIS RECIPE IS:

EASY | TENDER | DELICIOUS | FLAVORFUL | FULL OF CHEESE | A MASTERPIECE  | VEGAN | TO SHARE

 

It’s quite easy to make pizza, and this one it’s not different. You just need to make the dough by mixing all the ingredients and kneading them until you get a smooth and springy dough. Then caramelize your onions until they´re soft and dark gold. Sauté the mushrooms and blanch the spinach.

 

Lastly assemble the pizza, starting with the dough (duh :D), then the tomato sauce, the cheese (a generous amount), then a layer with the onion, the mushrooms and the spinaches, a bit more cheese if you want, and some oregano. (cause there are no pizza without oregano, right?) Bake it for about 25 minutes or until the cheese has melted and the dough has doubled the size and are golden brown.

Ingredients:

DOUGH

200gr of warm water

20gr of olive oil

1 tsp of salt

5gr of dried yeast

420gr of all purpose flour

 

FILLING

2 red onions

Olive oil

1 tbsp of coconut sugar

125gr of pleurotus mushrooms

5 tbsp of tamari sauce

50gr of baby spinaches

7 pitted black olives

150gr of Violife Mozzarella Grated cheese

 

SAUCE

Ingredients:

DOUGH

200gr of warm water

20gr of olive oil

1 tsp of salt

5gr of dried yeast

420gr of all purpose flour

2 red onions

Olive oil

1 tbsp of coconut sugar

125gr of pleurotus mushrooms

5 tbsp of tamari sauce

50gr of baby spinaches

7 pitted black olives

150gr of Violife Mozzarella Grated cheese

Instructions:

1- Start by making the dough. Put the flour and the yeast on to a clean work surface and make a well in the middle.

 

2- In a bowl, mix the salt and the olive oil with 200gr of warm water.

 

3- Put the mixture into the little hole that you have made with the flour and the yeast.

 

4- Use a fork to bring the flour in gradually from the sides and mix it into the liquid. Keep mixing and when it all starts to come together, work the rest of the flour with your hands. Knead until you have a smooth and springy dough.

 

5- Place the ball of dough in a large flour-dusted bowl and cover it with a small kitchen towel. Place it in a warm room until the dough has doubled in size. (this may takes 1hour)

 

6- In the meantime, slice the onions and put them into a pan with a drizzle of olive oil and the coconut sugar, and let it sauté until soft and dark gold.

 

7- Slice your mushrooms longitudinal and not to much regular. Then sauté the mushrooms with the tamari sauce for about 5 minutes, on high heat. You don’t want the mushrooms to lose all the water, the goal is only to get more flavor.

 

8- Now it ́s time to “boil” the spinaches. Put your water to boil in a small pot or electric kettle. Put the spinaches into a strainer and when the water’s boiled all you need to do is to pour it over the spinaches. Then, rinse them down with cold water, as cold as you can get.

 

9- Now it ́s time to roll the dough. Go grab it (after one hour) and simply roll out the dough onto a floured surface. Roll out into a rough circle, about 0.7cm thick, and place it on a pizza baking tray or just place it just like that on a common baking tray if you start to assemble the pizza right away.

 

10- Now add the tomato sauce, a generous amount, but leave a border of about 1 cm all around the pizza without tomato sau-ce. Then put the cheese, the mushrooms, the onions, the spinaches and the olives. Finish up your pizza with some oregano and place it in the oven, preheated at 180°C (356°F) and let it bake for about 25 min, or until the cheese has melted and the dough has doubled the size and are golden brown.

 

11- Serve immediately, because nothing can be better than a just-made pizza with melting cheese. You can store the lefto-vers on the fridge and eat on the next day, my advice is for you to reheat your pizza for about five minutes in the oven again
