CHOCOLATE AND MANGO TRIFLE

A CONTRAST THAT BALANCES

You know those recipes that leave no one indifferent, that attract everyone’s eyes and provoke everyone’s desire? Trifles are that type of recipe! Colorful, full of textures and flavors that contrast while balancing, trifles are with no doubt the most festive sweet of all!

 

No one needs to be very skilled in the kitchen because even the cake doesn’t need to be unmolded!

 

Well, the trifle I bring you today combines the intensity of a chocolate cake with the sweetness and freshness of a very ripe mango, points of acidity with pomegranate and currant and ends up with the creaminess of a cream and vegan cream cheese that is just irresistible!

 

I’m biased, but do you know when you take your first bite of something and feel like a feast of flavors is happening inside your body? That’s how I felt when I tried this trifle for the first time!

 

And as everything is even better with company, today I suggest Cockburn’s 2015, a Port wine with notes of vigorous fruit, plum, red cherry and black pepper, a classic vintage that harmonizes beautifully with this trifle.

To make this trifle we need to follow 3 simple steps. Make the cake, cut the fruit and finally the cream.

 

The chocolate cake I used in this recipe is already well-known around here, I used the Chocolate and Peanut Butter Cake recipe that I already shared with you, because besides being simple, it is a very moist and intense cake. Basically, it’s mixing the dry ingredients, mixing the wet ingredients, mixing the both, putting it in the oven and it’s done!

 

Then, I chose 2 very ripe mangoes, those that emanate a very strong scent, and cut them into cubes. I peeled a pomegranate and also prepared the currants.

 

Finally, just whip the cream with the vegan cream cheese, add a little sugar and beat until it’s as creamy and homogeneous as possible.

 

To assemble the trifle, just crumble the cake with your hands (I confess that it gives a special pleasure), place it at the bottom of the trifle bowl of your choice, without pressing it, then add the mango, currants and pomegranates and finish with a generous dose of the cream.

Ingredients:

FOR THE CAKE

See the Chocolate and Peanut Butter Cake recipe and only make half of the recipe

 

FOR THE FRUIT LAYER

2 very ripe mangoes

1/2 pomegranate

100g fresh red currants

 

FOR THE CREAM

1 package (250ml) of soy cream for whipping

200g vegan cream cheese

1 tbsp of sugar

Extra currants for garnish

Ingredients:

FOR THE FRUIT LAYER

200g vegan cream cheese

1 tbsp of sugar

Instructions:

1- Start by making the cake, following the step-by-step of the Chocolate and Peanut Butter Cake recipe;

 

2- Peel and cut the mangoes into small cubes and set aside;

 

3- Peel the pomegranate and set aside;

 

4- Separate each currants ball from its respective stalk and set aside;

 

5- Whip the cream until it becomes whipped cream, then add the sugar and the cream cheese, and whip until you get a cream that is as smooth and homogeneous as possible;

 

6- Assemble the trifle starting with the first layer that will be the cake. Crumble the cake with your hands and place it inside the trifle bowl you chose. On top of this first layer, add the mango cubes, pomegranate pieces and currants. Finish with all the cream you whipped.
