Who says we can’t make something healthy, nutritious and 100% plant based for a Halloween table or any other themed party?
“Oh but I’m not good at cooking and the final result is going to be awful!” Calm down yourself! Don’t worry, Alexandra here thought of all of you who have less skill in the kitchen. This recipe, which is actually two, is as simple as it can be.
“Ok, ok… but if it’s healthy, nutritious and 100% plant based, it can’t be tasty, right?” Wrong! I dare to say that these crackers and this vegetable pate are one of the tastiest things I’ve ever eaten in my life! The kind starter that when you notice, not even the crumbs are left.

I´ve already told you that both the crackers recipe and the pate recipe are super easy! No one wants to waste a lot of time in the kitchen on holiday days, so I thought this recipe to be simple and even better, it can be made the day before!
To make the vegetable pate, you just need to cut the vegetables, put them on a baking tray and put them in the oven. After the vegetables are well roasted and caramelized, all you have to do is to mix them with white beans and grind everything until you get a smooth, intensely colored cream.
For the crackers you just put all the ingredients in a bowl, knead everything with your hands until you get an easy-to-mold dough, place the dough on a clean surface, open with the rolling pin until it has a height of 3 millimeters more or less, cut into rectangles of more or less the same size, put in the oven for 10 minutes and they are ready.
These crackers are gluten free, the only flours I used were ground flaxseed and sesame flour from Dragon SuperFoods. This sesame flour is organic and what I like most about it is the fact that it is super thin and therefore very easy to work with, but also because it has a very present sesame seeds flavor that leaves a delicious aroma in the air and in any recipe to which this flour is added. It was the first time I worked with it and I already loved it! By the way, Dragon SuperFoods flours have all excellent quality! You can find Dragon SuperFoods products in the Pronatural online store.
FOR THE ROASTED VEGETABLES PATE
1 carrot (120gr)
1/2 beetroot (65gr)
1/2 red bell pepper (130gr)
2 garlic cloves
1 tbsp of olive oil
1 tsp smoked paprika
1 tsp of thyme
Salt and black pepper to taste
Tabasco to taste
200g cooked white beans
FOR THE CRACKERS
90g of ground flaxseed
60gr of Sesame Flour from Dragon SuperFoods
1 tsp of salt
1 tsp garlic powder
4 tbsp of olive oil
10 tbsp of water
2 tsp activated charcoal powder
2 tsp thyme
3 tbsp sesame seeds
FOR THE ROASTED VEGETABLES PATE
1 carrot (120gr)

1/2 red bell pepper (130gr)

1 – Start by peeling the carrots and beets and cutting them into coarse cubes. Cut the pepper into coarse pieces and the garlic cloves in half. Place everything in a small baking dish and add the olive oil, paprika, thyme, salt, pepper and tabasco, wrap well and bake in a preheated oven at 200ºC for about 40 minutes, or until the vegetables start to caramelize. Don’t be afraid to let the vegetables “burn” slightly. Open the oven halfway through the 40 minutes to stir the vegetables.
2- While the vegetables are in the oven, place all the ingredients for the crackers in a bowl and knead well until you get an easy-to-mold dough.
3- Place the cracker dough between two sheets of parchment paper and with the help of a rolling pin, roll out the dough until you get a flat surface of about 3 millimeters. Remove the parchment paper from above, and with a knife, cut the crackers in the shape you want. Take it to the oven at 200ºC, on top of a oven tray (and without removing the parchment paper underneath), for about 7 minutes.
4 – When the vegetables are roasted, remove from the oven and place in a food processor, along with the white beans and grind everything until you get a smooth cream and without lumps.
5- When you take the crackers out of the oven, wait for them to cool down a little, and then break each one by the area of the cut you made.
6- Serve immediately or the next day. If you serve the next day, don’t forget to store the crackers in a container that closes tightly, so they stay crispy.
