I must have been born with an Italian rib, I don’t know… What is certain is that if pasta were a more nutritionally interesting food, I would eat pasta every single day! I don’t know what pasta has that comforts me, satiates me, makes me feel good, in a good mood!
Another cool thing about pasta is its versatility. In addition to its numerous formats that alone lead us to travel in different sensory and flavor experiences, pasta is also very easy to combine with the most varied vegetables and proteins, with the most varied sauces, mushrooms, etc… It’s easy to get creative with pasta, and the probability of a pasta dish ending up horrible is almost none. If you ever eat a pasta dish that isn’t good, be suspicious of the person who made it! (just kidding)
I particularly like to combine pasta with tomato. That basic but perfect combination that transports me to a very good place. You know those days when you wake up feeling like a S#$% and you just feel like not listening or talking to anyone? A plate of pasta with tomato sauce usually helps a lot!
So today, I bring you a recipe that will immediately make your day more colorful and give you back the energy and smile that you may be missing!
EASY | COMFORT FOOD | FLAVORFUL | FOR ALL FAMILY
If there’s one thing I like when cooking, it’s not having to use more than a pan! Nobody deserves a thousand pots to wash after a meal. So today’s recipe is One Pot Pasta, which basically means that we will only need a pan and the stove to cook this delicious meal.
This recipe is made with simple ingredients that if you don’t have them at home, you can easily find them.
The protein I chose to use in this recipe you already know, at least by those who have been following me, and it’s one of my favorites too! I’m talking about Dragon SuperFoods Plant Protein Minced.
I love this product! Unlike textured soy protein, this one made from peas and fava beans absorbs seasonings much better, has a much more tender texture and I find it much more versatile. It doesn’t taste like peas or fava beans, it tastes like the spices you put on it, believe me! I’m a real fan! Oh! For every 100gr of this product, you get 53gr of protein, this for those who still have doubts that it is possible to obtain large amounts of protein with an 100% plant-based diet.
I won’t go into further details because I really want to share with you the list of ingredients so that you can make this recipe as soon as possible at home!

150gr of Dragon SuperFoods Plant Protein Minced
1 chopped onion
2 minced garlic cloves
1/2 red bell pepper cut into cubes
1/2 carrot cut into cubes
2 bay leaves
2 tsp oregano
2 tsp paprika
2 tbsp soy sauce
400g diced tomato
210gr of tomato pulp
250g of pasta
3 cups of vegetable broth
1 package (250ml) of vegan soy cream
100g grated vegan mozzarella
Salt
Black pepper
Olive oil
150gr of Dragon SuperFoods Plant Protein Minced

1/2 carrot cut into cubes
2 bay leaves
2 tsp oregano
2 tsp paprika
2 tbsp soy sauce
400g diced tomato
210gr of tomato pulp
250g of pasta
3 cups of vegetable broth
1 package (250ml) of vegan soy cream
100g grated vegan mozzarella
Salt
Black pepper
Olive oil
1 – Start by putting the protein in a bowl to soak in boiled water. Leave to soak until ready to use.
2- Put a drizzle of olive oil in a pan, when it is hot, add the onion, garlic and pepper, and let it cook until the onion is translucent.
3- Add the carrots, herbs and spices, soy sauce and salt and cook for about 5 minutes, stirring occasionally.
4- Drain the protein, and discard all the water. Add the protein to the pan, stir to combine well with all the other ingredients. Add the tomato, the tomato pulp and the vegetable broth and let it cook for about 8 minutes.
5- Add the pasta and let it cook for about 10 minutes, or until the pasta is al dente.
6- Add the cream, adjust seasonings (salt and pepper) and let it cook for 3 minutes.
7- Remove from the heat, add the cheese and mix well so that it melts and mixes with all the ingredients.
8- Serve immediately with grated cheese on top and a little basil leaf to make the dish more beautiful and tasty.
