The recipe that today I bring to you was inspired by an experience that my mother did a few months ago. She had just made a sponge cake that it didn’t bake perfectly. We had visits, and so she thought to cut the cake into slices, laying the slices on a platter and pour some milk custard on top. The result? Everyone loved it and licked their fingers!

 

I got that in my mind right away! I thought the idea was great and I needed to do something like that, but 100% plant based. I am an unconditional orange cake lover, those that are very moist and that really taste like orange!

 

So my idea was to recreate my mom experience, but this time with orange cake and the milk custard flavored with orange too. Hmmm can you imagine the scent? Both milk custard (leite-creme in Portuguese) and orange cake are two traditional Portuguese desserts that can never miss on holiday´s tables from north to south of the country.

 

Leite-creme is one of the favorite desserts both by Portuguese people and by tourists who end up bumping into the beauty and aroma of this traditional dessert in all restaurants in the country.

We know that leite-creme, like almost all traditional Portuguese desserts and sweets, has conventual origins, this is why we have so many egg yolks in the traditional recipe. But as we are all about cruelty free recipes, the version that I will share with you not only has no eggs, no milk, but also has a strong presence of orange instead of lemon.

This recipe is an excellent option for your Christmas table, and best of all, it is quick and leaves us free time to dedicate ourselves and to what really matters, being with the family.

 

The leite-creme you just put everything in a pan, let it boil, stir, stir, stir and it’s ready in 10 minutes.

 

The cake is equally simple, and takes just over 20 minutes in the oven.

 

Then just join the two, caramelize the top of the custard and that’s it!

 

I guarantee everyone will love it! (less the people who don’t like orange, obviously!)

Ingredients:

MILK CUSTARD:

1 cup of unsweetened soy milk

7 tbsp of corn starch

2/3 of cup of yellow sugar

1/3 coffee spoon of turmeric powder

1 orange zest

1 cinnamon stick

1 anise star

 

CAKE:

2 cups of whole spelt flour

1 cup of yellow sugar

1 tsp of baking soda

1 pinch of salt

½ coffee spoon of turmeric powder

1 cup of unsweetened soy milk

1 tbsp of apple cider vinegar

1 orange juice

1/3 cup of olive oil

2 oranges zest

Ingredients:

MILK CUSTARD:

1 cup of unsweetened soy milk

7 tbsp of corn starch

2/3 of cup of yellow sugar

1/3 coffee spoon of turmeric powder

1 orange zest

1 cinnamon stick

1 anise star

 

CAKE:

2 cups of whole spelt flour

1 cup of yellow sugar

1 tsp of baking soda

1 pinch of salt

½ coffee spoon of turmeric powder

1 cup of unsweetened soy milk

1 tbsp of apple cider vinegar

1 orange juice

1/3 cup of olive oil

2 oranges zest

Instructions:

1- Put all the ingredients of the milk custard in a pan, and before turning on the stove, stir well with a whisk to completely dissolve the corn starch. Then turn on the stove and let it boil.

 

2- Once it start to boils, reduce the heat so that it continues to boil but with less intensity. Stir continuously with the whisk until reach the desired creamy consistency, which should take about 10 minutes. Keep in mind that after the custard is cold will become even more solid.

 

3- Put the custard aside to let it cool completely.

 

4- Preheat the oven to 180°C (356°F).

 

5- Put in a bowlall the cake dry ingredients and stir them well with a whisk.

 

6- In another bowl place the soy milk and the apple cider vinegar, and whisk vigorously until a foam forms on the surface. Now add the orange juice, orange zest, olive oil and turmeric and stir.

 

7- Add the wet ingredients with the dry ones and mix well, without over stirring, just until the dough is uniform and free of lumps.

 

8- Pour the cake dough into a pyrex. That pyrex or a ceramic baking dish you choose will be the one in which you will serve your cake at the end, as this cake will not be unmolded, so choose the one that you like the most.

 

9- Take the cake to the oven for about 20 minutes or until you stick a toothpick in the center and it comes out clean.

 

10- Remove the cake from the oven, let it cool for about 5 minutes and pour the custard over the entire surface of the cake.

 

11- When serving, add yellow sugar on top of the custard, and caramelize the entire surface with a kitchen blowtorch. This step is not optional, because it makes all the difference in dessert final flavor.
