I love cookies! And unlike many people, I like homemade cookies, with that rustic look that good food have, you know? I really think the final taste of a cookie is not just the combination of ingredients but also the appearance. The formula is simple, combination of ingredients + appearance = final taste.
These blossom cookies that I bring to share with you today are a perfect example of all this. “But what are blossom cookies?”
Blossom cookies are cookies that look like a flower. No, they don’t have petals, stems or leaves, but their round shape with the center highlighted by a filling immediately reminds us of a beautiful flower.
Created by the hands of a woman named Freda Strasel Smith, these cookies made their first appearance at the 1957 Pillsbury Bake-Off contest in Los Angeles.
Originally, Freda created a flower-shaped peanut butter cookie with a chocolate center, but on the contest day, Freda’s pantry lacked chocolate chips, and she quickly thought of a solution for her cookies. The center with melted chocolate chips was replaced by Hershey’s Kisses, which were added to the cookies after they came out of the oven due to the fact that they are much larger than chocolate chips. This change could not have turned out better, leading her to re-enter the competition and get on the podium with an honorable 3rd place!
Despite not winning 1st place, Pillsbury fell in love with blossom cookies and in 1965 took Freda’s daughter to New York to film an advertisement of her making the famous flower-shaped peanut butter cookies for her mother. The Pillsbury Company has stated that blossom cookies are one of the most famous recipes ever entered in the competition, having been one of ten recipes to be introduced into the Pillsbury Bake-Off Hall of Fame at the Smithsonian National Museum of American History in Washington, D.C. in 1999.
Well, after reading this inspiring and successful story, I couldn’t resist creating a vegan version of these delicious cookies. We all know that combining chocolate with peanuts can never go wrong, right? Now imagine a peanut butter cookie with melted chocolate in the center? Have you already imagined it? Yap, that’s right, too good not to make!

These blossom cookies are truly easy to make.
Just mix all the ingredients in a bowl, knead until it forms an easy-to-mould dough, shape small balls, make a hole on each ball with your finger, where the chocolate will then be placed, put in the oven and that’s it.
I chose to put the cookies in the oven without the chocolate, to make the recipe easier. So you only need to melt the chocolate and when the cookies come out of the oven, add it on each little hole.
I chose to make the recipe without gluten and for that, in addition to peanut butter, I also used peanut flour. The flour I used was Dragon SuperFoods Peanut Flour. 100% organic peanuts, this flour has an incredible peanut aroma and a very fine texture, which allows it to be incorporated into the most varied recipes.
There are plenty of reasons to make this recipe, especially if you love the combination of peanuts and chocolate. I promise you won’t regret it, I mean, maybe you’ll regret the fact that there won’t be any maturity that can resist eating just one.
1 cup (85gr) of Dragon SuperFoods Peanut Flour
½ cup (130gr) of peanut butter (creamy or crunchy)
3 tbsp of yellow sugar
1 tbsp of flaxseeds meal
1 mashed banana (85gr)
1 tsp of baking powder
Vegan Chocolate chips to melt
1 cup (85gr) of Dragon SuperFoods Peanut Flour
½ cup (130gr) of peanut butter (creamy or crunchy)
3 tbsp of yellow sugar
1 tbsp of flaxseeds meal

Vegan Chocolate chips to melt
1- Preheat the oven to 180°C (356°F).
2- Put all the ingredients (except the chocolate chips) in a bowl, mix and knead with your hands until you get uniform dough, easy to mold and that doesn’t stick on your hands.
3- Shape small balls with the dough, and make a hole in each one with your finger. This hole cannot pierce the ball from one side to the other.
4- Place the balls on an oven tray previously lined with parchment paper, and gently flatten each one with your hand to form a cookie. Then define the hole in the center again.
5- Bake for about 15 minutes, or until you start to see the edges of your cookies turn golden.
6- Take them out of the oven and let them cool completely on a cooling grid, to keep all their texture. (it can be on the oven grid)
7- Melt the chocolate in a bain-marie and with a coffee spoon, fill each hole of each cookie.
8- Your cookies are ready to be devoured, still with the melted chocolate.
9- Once the chocolate solidifies again, you can store the cookies in a tightly closed container and in a not too hot place.
