We all have that favorite chocolate to enjoy at Christmas. A special chocolate, which is usually only sold at this time, which always comes in a beautiful, elegantly decorated box. And most of the time we buy to offer to the people we love.
My favorite Christmas chocolate is Raffaello! I love the taste, the texture, the look! Simply the best Christmas chocolate ever! Of course, after I became vegan, I never ate it again, but I confess that I loved that Ferrero brought a vegan version of its most iconic chocolates, just for me to dive into nostalgia.
But in the meantime, I’m doing some experiments at home that transport me to that flavor that I love so much! It was with that idea in mind that this year I decided to create a very special Christmas dessert, a Raffaello Mousse!
EASY | QUICK | CREAMY | FOR COCONUT LOVERS | RICH IN PROTEIN | WITH ONLY 5 INGREDIENTS
As usual here on the blog, this is another easy and quick recipe that can be made by everyone at home, even the kids!
It’s as simple as melting the chocolate, mixing all the ingredients in a food processor, grinding and you’re done!
An elegant and delicious dessert that all Raffaello or coconut lovers in general will love!
In this recipe there are two key ingredients, coconut that needs to be toasted to further enrich the recipe in terms of flavor, and chocolate, responsible for the smoother and sweeter side of this recipe.
Of course I had to choose Dragon SuperFoods Vegan White Chocolate Chips. I love the taste of these chips, they have a hint of caramel in the background that I particularly like a lot. It combined wonderfully in this recipe, and I think it even brought out the flavor of the chocolate used in the Raffaellos and helped bring it closer to the original flavor.
Well, let’s not waste any more time talking, because you’ll take longer to read the post than to make the recipe itself!
1 package of silken tofu (300gr)
40g of toasted coconut flakes
35g almond butter with skin
90gr of Dragon SuperFoods Vegan White Chocolate Chips
3 tbsp brown sugar

1- Start by melting the chocolate chips in a bain-marie.
2- Then, place all the ingredients, including the melted chocolate, in a food processor and grind until you get a very creamy result. Some chunks of coconut may not be crushed completely and that´s fine.
3- Divide the cream between 3 beautiful glass bowls and put it in the fridge for at least 1 hour.
4- When serving sprinkle the top with grated coconut.
