A CUTE LITTLE PURPLE MONSTER 

Halloween is just around the corner and I am super excited about it!!! I love Halloween! I don´t know about you, but for me this is one of my favorite Holidays (second only to Christmas). The vibes, the costumes, the songs, the movies, everything has a special and unique magic!

Halloween aka Dia das Bruxas here in Portugal, it has been growing over the past few years around here… Now we see kids on the streets trick-or-treating, we have parties at home, on the streets and even in the nightclubs. We kinda mimic the United States traditional Halloween, what we´ve always saw on the TV and it´s part of our imaginarium.

 

When I was a kid I loved watching Halloween movies but at that time the holiday was not yet celebrated here, so now i am a big enthusiast  and  I always organize a cool Halloween dinner with friends and family, everyone with their best costumes, and of course, good food on the table. On this horrendous night, even the food needs to be special and match with the occasion, and that’s precisely what brings me here today!

What can be better than a cake to celebrate this day? Cakes are always the Kings of the party, all the spotlights are turned to them and everyone are always super excited to eat a big piece of it. That’s why nobody expects less than something stunning on the outside and delicious on the inside.

So here my suggestion for your Halloween party! A cute little purple monster scared by huge spiders and a big knife that threatens to cut it into pieces!:)

THIS RECIPE IS:

It may looks difficult to make, or that will require a considerable amount of time to assemble everything and brings this cute monster to life, but it will not! This cake is super easy to make, even the purple ganache!

Grab a big bowl and add all the dry ingredients. On another bowl add the wet ingredients, then mix both with a spatula until well combined. Put on a round pan and bake it. In the mean time you can make your purple ganache by boiling purple sweet potatoes (yes this ganache is made of sweet potatoes :D) and then processing it with some lemon juice and rice syrup until creamy.

 

Once the cake has cooled it´s ready to decorate, you will make the chocolate filling by melting some dark chocolate with soy milk and mixing it with almond butter.

 

Now cut the cake in 3 equal parts and start assembly. First layer is your cake, then the purple ganache and then the chocolate filling, repeat the process and finish with your last part of cake. Spread a generous layer of the purple ganache all over the cake using a butter knife yields a smooth surface and make sure you cover all the cake!

 

Then you just need to open up two OREO cookies, make a little dot with the chocolate filling on the white part to create the monster eyes, and press them into the cake. Final step, stick a knife, crumble some OREOS on the top of the cake and there you have it! Your PURPLE MONSTER CAKE is ready to delight everyone!

Ingredients:

CAKE

3 cups of whole spelt flour

2 cups of coconut sugar

2/3 cup of raw cacao powder

2 tbslpn of maca powder

1 tblspn of baking powder

1 coffee spoon of baking soda

1 coffee spoon of salt

1 and ½ cup of unsweetened soy milk

1/3 cup of coconut oil

½ cup of almond butter

 

FILLING

200gr of dark chocolate(never less than 70% of cacao)

½ cup of unsweetened soy milk

1 big tblspn of almond butter

 

GANACHE

720gr of purple sweet potatoes

½ cup of rice syrup

1 tblspn of fresh lemon juice

 

DECORATION

10 OREO Cookies

Some plastic spiders

A big knife

Ingredients:

Instructions:

1- Preheat your oven to 180°C (356°F) and prepare a 8′′ round cake pan. You can grease it with coconut oil or butter and then dust with some flour and shake out the excess. Or you can use some parchment paper and line the pan. It ́s up to you.

 

2- Put all the dry ingredients in a bowl and stir with a whisk just to mix them.

 

3- On another bowl add all the wet ingredients and whisk them really well to combine.

 

4- Now combine the wet ingredients with the dry ingredients and whisk to incorporate and finish the batter. It will look like brownie batter, thick and consistent.

 

5- Put the batter into the cake pan and bake the cake for about 35 minutes or until a toothpick inserted into the center comes out clean and the top appears dry. Your toothpick needs to come out with little crumbs of cake on it and that means your cake is cooked but not dry. (on this specific case)

 

6- Remove the cake from the oven and wait about 5min to unmold it. Invert onto a plate or cooling racks and let it cool completely.

 

7- FOR THE GANACHE: cut the purple sweet potatoes into chunks and let them boil. Once they’re cooked drain the water and put the potatoes on a food processor. Add the rice syrup and the lemon juice and blend until creamy. Place in the fridge to set and cool down completely.

 

8- FOR THE FILLING: melt the chocolate with the soy milk in Bain Marie and once done remove from the heat and mix the almond butter with a spoon. Let it cool down a bit at room temperature.

 

9- Time to assemble the cake. Cut it into 3 equal parts with a big knife to help you, you don ́t need any fancy equipment to do that. Grab a beautiful plate and start with a first layer of cake, then spread some purple ganache for the second layer followed by the chocolate filling layer which will be your third layer. Repeat this same process one more time and finish with the last layer which will be a cake layer.
