THE NEW WORLD OF SAVORY WAFFLES

We are used to see sweet waffles, covered in sugar, fruits, syrups and even whipped cream (for the boldest ones), but, and there is always a but, it doesn’t necessarily need to always be that way.

 

One of the most fascinating things in the kitchen is that we can give wings to our creativity and interpret a recipe in the most varied ways, give it our touch and even transform the sweet into salty!

 

And this is exactly what I bring today to share with you, a recipe for savory waffles that will transform your Sunday brunches!

 

The key ingredient of this recipe is the tapioca flour, a naturally gluten-free flour and therefore a good alternative to the common wheat. It is not nutritionally amazing but it has its predicates such as being fat free and salt free.

 

In addition, it is a very good source of energy for those who workout because it is a fast absorption carbohydrate, which means energy ready to release, and because it does not have fiber that sometimes disturb the digestion of a pre-workout meal and leaves us with that feeling of swollen and heavy belly. Now we understand the hype around crepioca, right?

THIS RECIPE IS:

When I came up with the idea for this recipe, there were two things I knew, that I wanted it to be a recipe full of flavor and suuuuuuper cheesy. And to achieve this cheesy texture, tapioca flour is undoubtedly the ideal flour. It has the ability to agglutinate the ingredients and form a kind of an elastic gum that closely resembles the behavior of melted cheese.

 

Of course, I also added grated cheese to the party, because when the person says cheesy, it has to be really cheesy!

 

To contrast with the cheese flavor and make the waffles balanced, I added fresh herbs, to be more precise thyme and chives, which not only brought flavor but also perfume the entire kitchen!

 

I also made a tzatziki sauce, better known as a yogurt sauce, which combined perfectly with the waffles and complete the recipe.

Ingredients:

WAFFLES

170gr of Dragon SuperFoods tapioca flour

80gr of grated mozzarella vegan cheese

2 tbsp of olive oil

220 ml (1 cup) of unsweetened soy milk

1 tbsp of flaxseeds meal

1 coffee spoon of curcuma powder

Fresh chopped chives and thyme

Salt and black pepper

 

TZATZIKI SAUCE

150gr of unsweetened skyr style soy yogurt

½ coffee spoon of salt

1 tbsp of lemon juice

1 tbsp of olive oil

40gr of grated and squeezed cucumber

Fresh chopped chives

Black pepper

Ingredients:

WAFFLES

170gr of Dragon SuperFoods tapioca flour

Instructions:

1- Preheat the waffle maker.

 

2- Add all the ingredients of the waffles in a bowl and mix well with the whisk, until the tapioca flour is completely dissolved.

 

3- With the help of a spoon, place portions of the waffle batter in the waffle maker, close the machine and wait about 3 minutes for the waffle to bake on both sides. Repeat the process until all the dough is finished. ATTENTION: Because they are made with tapioca flour, these waffles should not be placed one on top of the other because they tend to stick while cooling.

 

4- For the tzatziki sauce, mix all the ingredients in a small bowl and mix well with a spoon. Adjust seasonings if necessary. After grating the cucumber should be squeezed so that it does not bring its water into the sauce.

 

5- Serve the waffles while warm to take advantage of the melted cheese and the tapioca texture.
