Anyone who was a child in the 80’s and early 90’s certainly remembers the birthday party tables full with the most varied sweets and candys. But the one that was always present was the chocolate salami! Slices of chocolate with pieces of Maria biscuits, wrapped in aluminium foil, which was often a challenge to remove completely, such was the eagerness to devour that piece of happiness. Salami was everyone´s joy, particularly the kids.
Its origin is not known for sure, some say it was born in Italy but there are also those who say that salami is part of Portuguese conventual sweets. Certain is that rare are those who resist it and even today it continues to be one of the favorite sweets on party tables, particularly at Christmas.
Traditionally made with chocolate, butter, eggs, pieces of biscuits and nuts, salami is starting to appear in the most varied versions, with more sugar, less sugar, with powdered chocolate, with chocolate bars, with eggs, without eggs, nowadays it is possible to find versions of this recipe that please the palate and needs of each one.
Whatever the version, the important thing is that it continues to shine and be present in all special moments!
EASY | QUICK | SWEET | CRUNCHY | INTENSE | RICH IN FLAVORS | SUPER AROMATIC | ELEGANT | FESTIVE
The chocolate salami version that I bring to share with you obviously could only be a version without any ingredients of animal origin. Without eggs, without animal fat and with vegan chocolate, I can assure you that this salami is just as delicious as the traditional version.
The main and most important ingredient in a chocolate salami is… CHOCOLATE! In this recipe I used not only a chocolate without any ingredients of animal origin but also without sugar! And you don’t need to grimacing, because I can assure to you that no one will notice the difference!
I used Sugar-free Vegan Chocolate Chips by Dragon SuperFoods, a chocolate in which sugar has been replaced by erythritol, a low-calorie sweetener, safe for people with diabetes, which does not generate that residual taste of common sweeteners that no one can stand and, in addition, its sweetness power is 70% compared to traditional white sugar, which makes it an excellent alternative to use in recipes. In short, these sugar-free chocolate chips are perfect for cooking sweet treats that everyone can eat!
This chocolate salami recipe is quite simple!
You just need to coarsely chop the nuts, break up the biscuits with the help of a rolling pin, melt the chocolate with the butter in a bain-marie and then pour the chocolate over the dried fruit and biscuits, add orange zest, a little bit of rum, mix everything with a spatula and place on a sheet of parchment paper. Then, form a roll with the help of parchment paper, and squeeze well, closing the ends of the parchment paper like a candy. Put them in the fridge for about 2 hours until the salami is very cohesive and firm.
When serving, just remove the salami from the fridge, remove the parchment paper, sprinkle powdered sugar over the entire surface, and cut into slices.
