Today I bring you the perfect recipe to use the last cherries of the season (or maybe the first ones)!

 

Originating in France, more precisely in the Limousin region (central-south), Clafoutis became popular during the 19th century. Traditionally made with cherries, clafouits is a sweet that sits right there between cake, pudding and pie, and brings together the best of 3 worlds!

 

It’s a rustic recipe, the kind that grandmothers make to gather the whole family around the table and for that very reason it’s a simple sweet but full of flavor and comfort. You know those sweets that hug us? Clafoutis is just that.

 

A curiosity about clafoutis, did you know that traditionally it is made with unpitted cherries? That’s right! This is because they say that the pits gives the dessert a subtle aroma and flavor of nuts. Thinking about it, it might even be an excellent idea because it takes even less work to do.

 

To pair this vegan clafoutis I suggest the Smith Woodhouse LBV 2010, a vintage port with notes of black cherry, black plum, raspberry, black olive, dark chocolate and kirsch. A perfect pairing that undoubtedly makes the whole clafoutis tasting experience even more sublime! Save the tip.

You already know that I don’t like too complex recipes and that I always bring you simple and flavorful things to make!

 

This Vegan Clafoutis is ridiculously easy to make and is ready in just 35 minutes!

 

Following the traditional recipe, I could not bring this recipe with any other fruit than cherries. You can make it with other fruits that you have at home, but according to the literature, clafoutis made with other fruits are not clafoutis, it is flognarde. Anyway, feel free to use whatever fruit you prefer because it will be delicious either way.

 

Basically you just need to pit the cherries with the help of a straw (or use the unpitted cherries according to the original recipe), place the cherries in a large baking tray or in individual ones. Mix the dry ingredients in one bowl, the wet ingredients in another and then add the two stirring with a whisk until you get a uniform batter without lumps. Pour the batter over the cherries and bake for about half an hour.

 

Then they can be served warm or cold and generously sprinkled with powdered sugar.

 

Simpler than this impossible!

Ingredients:

300gr of cherries

1 cup (141g) of all-purpose flour

1/2 cup (65g) of almond flour

1 tbsp of corn starch

1/2 cup (110g) of sugar

1/4 tsp of salt

1 and 1/4 cup (325g) of almond drink

1 tsp of vanilla extract

1 tsp of cider vinegar

Powdered sugar to finish

Ingredients:

300gr of cherries

7- Take it to the oven for 35 minutes.

 

8- Remove from the oven and let it cool.
