Who doesn’t like some beautiful butter cookies, those very soft ones that melt in the mouth? These cookies bring back memories of my childhood, the time when people offered those beautiful and shiny tins, which we were able to foresee what was inside of them. And there were they, butter cookies in the most different shapes covered by generous sugar grains! Hmmmmm what a yumy memory!
These famous and beloved cookies originate in Denmark, and that´s why they are also known as Danish cookies. The two most popular brands of these butter cookies are The Royal Dansk and Kjeldsens, both recognized not only for the premium quality of the cookies they produce, but also for the traditional way of making their cookies maintained until today, and of course for their tins. (I said that the tins were important)
And why are butter cookies sold in tins? Simply because inside the tins, the cookies can maintain all their freshness. In addition, the tins can be opened and closed as many times as we need until the cookies are finished, and they can also be reused when empty. I’m in love with these tin boxes, they look super vintage and super gorgeous on any shelf!
Well, but we are already straying from what really matters. Butter cookies are basically cookies where, as the name says, butter is the queen! In addition to the butter, and following the traditional recipe, these cookies take only 2 more ingredients, sugar and wheat flour. They are the perfect match for a tea with friends, or even to offer to someone special.
Because it is such a simple recipe with so few ingredients, veganizing this recipe was not a huge challenge, but the result was incredible!
RIDICULOUSLY EASY | SWEET | BUTTERY | SOFT | TENDER| QUICK | AFFORDABLE
As rule, none of the recipes that I bring to share with you is complex, but this one is ridiculously easy! Even a child is capable of doing it.
You will only need 3 ingredients, a bowl, and the willing to eat butter cookies!
In this recipe, for personal taste, I suggest making the butter cookies with whole spelt flour, but you can use regular wheat flour, you will probably have to use a slightly larger amount of regular flour, as this is not whole.
Let me just tell you that yes, they are the perfect cookies to offer to someone this Christmas, because they are cheap, easy and quick to make and absolutely delicious!
200gr of vegan butter
100gr of powdered sugar
180gr of whole spelt flour
(Maybe 2 tbsp of soy milk)

1- Preheat the oven to 150 ° C.
2- Place the butter in cubes and the sugar in a bowl.Beat with an electric mixer until you get a very fluffy cream with a very light yellow color, almost white.
3- Add the flour and wrap with a spatula, or with your hands, until you get an homogeneous dough.
4- If the dough is too thick to extrude with the pastry bag, add one or two tablespoons of soy milk and wrap well.
5- Place the dough in a pastry bag, with an open star shaped piping tip, and on the oven tray previously lined with parchment paper or silicone base, pip the dough forming the cookies, more or less in a circular shape. You can make the cookies in any shape you like, but these are one of the easier versions.
6- Sprinkle with white sugar on top and bake for 20 min, or until the cookies have a slightly golden color on the edges.
7- Remove from the oven and place each cookie to cool on a cooling grid to keep the texture crispy on the outside and soft on the inside.
