Who doesn’t like meatballs?

 

Although its origin is not clear, there are several theories that defend that the origin of the meatballs is Persia, where they were made with the leftover meat used to make Kofta.

 

Origins aside, meatballs are now made all over the world and are by far one of the most popular dishes for both children and adults.

 

There are several ways to present the meatballs, but one of the most famous is undoubtedly the meatballs with tomato sauce and a delicious dish of spaghetti. Can you resist? 

 

We all know that traditional meatballs are made from meat, but versions made with 100% plant based ingredients are increasingly requested and loved! I think the fact that they are made with a wide variety of vegetables, herbs and spices makes them much tastier than the traditional versions.

The meatball recipe that I bring to share with you is one of those perfect recipes to always have on hand to eat on days when time is short for cooking.

 

A simple and nutritionally complete recipe, particularly rich in protein.

 

One of the main ingredients in these meatballs is Dragon SuperFoods Textured Plant Protein. It has a neutral flavor and no added artificial flavors. Made only with pea protein, fava bean protein and salt, it is a super versatile alternative to any 100% plant based recipe that wants to be rich in protein. 

 

In addition to the textured protein, I also used portobello mushrooms and eggplant as main ingredients in this recipe.

 

The tomato sauce is super basic, also with simple ingredients that anyone has at home.

 

In short, this recipe is to keep in your book of infallible and practical recipes, which you repeat over and over again because everyone loves it!

Ingredients:

FOR THE MEATBALLS

100gr Dragon SuperFoods Textured Plant Protein

1 chopped onion (130gr) 

2 chopped garlic cloves

70gr of chopped red bell pepper

200gr of chopped portobello mushrooms

120gr of eggplant cut into small cubes

1 tbsp soy sauce

2 coffee spoons of salt

1 tsp of paprika

1 tsp of dry chives

1 tsp of dry basil

Black pepper 

5 tbsp of flaxseeds meal

Olive oil 

 

FOR THE TOMATO SAUCE

500gr of tomato (frozen or fresh)

60gr of chopped red bell pepper

2 chopped garlic cloves

1 bay leaf

1 tsp of dry thyme

1 tsp of paprika

1 tbsp soy sauce

1 coffee spoon of turmeric

2 coffee spoons of salt

1 coffee spoon of baking soda

Black pepper 

Ingredients:

FOR THE TOMATO SAUCE

500gr of tomato (frozen or fresh)

60gr of chopped red bell pepper

2 chopped garlic cloves

1 bay leaf

1 tsp of dry thyme

1 tsp of paprika

1 tbsp soy sauce

1 coffee spoon of turmeric

2 coffee spoons of salt

1 coffee spoon of baking soda

Black pepper 

Instructions:

1- Start by hydrating the textured protein, soaking it in about 500ml of boiled water.

 

2- Meanwhile, put a drizzle of olive oil in a frying pan and add the onion, the garlic and the red bell pepper, along with soy sauce, paprika, chives, basil and black pepper. Stir until the onion starts to acquire a translucent golden tone.

 

3- Add in the mushrooms, the eggplant and the salt, and keep stirring, until the mushrooms and the eggplant reduce their size to about half.

 

4- Drain the water from the protein, and crush the protein with your hands to the pan. Keep stirring until all the ingredients are evenly distributed and the protein is completely broken and moldable.

 

5- Remove from heat and add the flaxseeds meal. Stir well to create a homogeneous paste. Place in a bowl until completely cooled before shaping the meatballs.

 

6- For the tomato sauce, put all the ingredients in a pan, except the baking soda. Let it reduce over medium heat. As soon as it starts to boil, add the baking soda and stir to dissolve all the foam that will form. 

 

7- When all the ingredients are tender, remove from the heat and with a hand blender grind everything until you get a smooth sauce.

 

8- Take the dough for the meatballs and make balls the size of a ping pong ball at most. You can freeze it for later, or cook it right away.

 

9- Place the meatballs in the pan with the tomato sauce, add in 125ml of hot water and bring to a boil. Cook the meatballs for about 5 minutes. If you freeze them, let them cook for about 15 minutes.
