A SWEET REVOLUTION

Napoleon in Russia, mille-feuille in France, and countless variations and interpretations across the globe, the truth is that no one remains indifferent to the delicious appearance of puff pastry with generous layers of cream in the middle.

 

With many thin layers, with just two or three and a bunch of cream, with fresh fruit, chocolate, caramel, the Napoleon is a cake that has just 3 rules, it has to be made with puff pastry, a rich cream and it has to have an irresistible appearance. Which isn’t difficult.

 

Its origin is still a topic of controversy, but what brings unanimity is the love for this sweet treat.

 

I wanted to bring a very easy version so everyone can make it at home and enjoy all the flavor and texture of this little wonder! Instead of mille feuille, in this recipe we only use two sheets of puff pastry, and for the filling I created the perfect mix of vegan cream cheese, powdered sugar and vanilla. As I always like to put a twist on the obvious, I decided to add caramelized orange segments to this version of Napoleon. They were incredible and completely transformed the recipe!

 

The perfect pairing for this sweet is without a doubt Graham’s Quinta dos Malvedos 2018, an engaging Vintage port wine with personality. It’s not one of the sweetest port wines I’ve ever tasted, and that’s why it brings the perfect balance when enjoy this Napoleon.

I already told you before that the recipe is easy, right?

 

Basically, you just need to take a rectangular sheet of puff pastry, cut it into 8 equal rectangles, brush with a little plant based milk and bake until they rise and turn golden.

 

Meanwhile, beat the cream cheese with the powdered sugar and vanilla until you get a super creamy and smooth result.

 

Then peel the oranges and peel each segment, removing the skin around each segment. When this task is completed, place each segment in a preheated frying pan covered with brown sugar. Let it caramelize on one side and carefully turn it over on the other so that it is caramelized on both sides.

 

Then just assemble. Cut each rectangle of puff pastry in half, place the filling with the help of a pastry bag, add chopped nuts, and finish with the orange segments.Place the other part of the puff pastry on top and finish with sifted powdered sugar on top.

Ingredients:

1 sheet of rectangular puff pastry

3 oranges

Yellow sugar

600g of vegan cream cheese

300g of powdered sugar

6 tsp of vanilla extract

Some nuts (cashews, peanuts, hazelnuts, almonds)

Instructions:

1- Preheat the oven to 180ºC;

 

2- On a baking tray, open the puff pastry sheet and cut it into 8 rectangles of the same size. Separate each rectangle so that there is at least 0.5cm of space between them. Brush each one with a little plant based milk and bake it until they rise and golden.

 

3- Meanwhile, place the vegan cream cheese, powdered sugar and vanilla extract in a bowl and beat until you get a very smooth and silky cream. Reserve in the fridge until assembly time.

 

4- Peel the oranges, separate the segments and remove the skin around each segment. It’s a slightly time-consuming process but essential for perfect caramelization of the orange.

 

5- Cover the surface of a frying pan with brown sugar and turn the heat on. When the frying pan is hot, place the segments on the sugar gently one by one. When they are caramelized, turn them over to the other side to caramelize on both sides.

 

6- After the segments have caramelized, let them cool completely before assembling.

 

7- Assemble the Napoleons just before serving, cutting each rectangle of puff pastry in half very carefully so they don’t break. Then add a generous amount of cream cheese filling to one of the halves. Chop the nuts and place on top. Finish by adding the caramelized orange segments until the entire surface is covered. Close with the other half of puff pastry and finish with a sifted of powdered sugar.
