Jello! Perhaps I can say that it is the favorite dessert of most children. Colorful, with a special texture and a fun movement, it’s hard to remain indifferent.
I remember asking my mother for a mixture of colored squares of jello and whipped cream that she used to make, to be my birthday cake, such was my passion for this combination.
Well, leaving the memories aside, the fact is that the common gelatin, the one that is presented to us and that many of you still eat is from animal origin. That’s right. It is made from cartilage, skin and even bones of animals that have been slaughtered for meat consumption, or in other words it is made from animal by-products. But fortunately, there are more and more 100% plant based gelatine alternatives that are in no way behind the traditional versions.
The recipe that I share with you today is made with a gelling powder of vegetable origin, called agar-agar. “But what is this agar-agar thing?” Agar-agar is a micro-algae that has thickening, stabilizing and gelling properties, that is, it is perfect for culinary use helping to bring more consistency to some preparations as well as for making jellies or recipes that need structure.
Agar-agar is also rich in phosphorus, potassium, iron, chlorine and iodine, and many people use it in their daily lives simply for its nutritional properties.
And if you’re wondering “But if agar-agar is a micro-algae, won’t my dishes taste like fish?” No! Agar-agar is completely neutral, it has absolutely no taste or smell. It also has no color, that is, the color you have on your plate will not be changed by the addition of agar-agar.
You can easily find it in powder and flakes, and both versions work perfectly. Even so, I particularly prefer the powder, I always find it easier and faster to dissolve.
Now that you already know what agar-agar is and what it is for, let’s get to know today’s recipe.

Vegan Peach Jello! The name alone makes you want to devour it. How not to like peach jello?
To make this recipe you will only need 5 simple ingredients, one of which is water! Yes, the base of this recipe is water, that’s why it’s so light and refreshing.
I decided to make this gelatin from an infusion, but not any infusion. I’m talking about the TeaPigs Peach and Mango Cold Brew Infusion. This infusion was made to infuse in cold water, that is, we don’t need to boil water, just put the pyramid with the infusion in cold water or at room temperature, wait a few minutes and it’s ready!
Another particularity that makes me like this infusion so much is the fact that it is made with high quality ingredients and with large, whole leaves, which gives it an incomparable flavor and aroma! As if all this were not enough, Teapigs infusions come in a completely plastic-free packaging and even the pyramids themselves are made from 100% plant-based materials. I’m a fan!
Well, to make this recipe you just need to infuse 2 pyramids of peach cold brew in water, add sugar (enough to make it pleasantly sweet), add the agar-agar, stir and heat until it boils. Then pour it into a silicone mold, as it makes it easier to unmold, take it to the fridge for about 4 hours to solidify, and it’s ready.
That simple!
I even added some fresh peach cubes, to give it more texture and color, and make this jello even more special and elegant.
1L of water at room temperature
2 TeaPigs Peach and Mango Cold Brew Infusion Pyramids
1 tbsp of agar-agar powder
7 tbsp of sugar
1 fresh peach
1L of water at room temperature

1 fresh peach
1- Put the water and the infusion pyramids in a pan, and let it infuse for about 5 minutes.
2- Meanwhile, wash, peel and cut the peach into small cubes. Place it at the bottom of the silicon mold.
3- Add the agar-agar and sugar to the infusion and stir.
4- Bring to a boil. When it boils, stir non-stop for about 1 minute to activate the gelling properties of the agar-agar.
5- Remove from the heat and pour a little over the layer of peach that is already in the mold, in order to cover the peach. Place in the fridge for about 10 minutes just to solidify on the surface and prevent the peach cubes from rising and spreading throughout the gelatin.
6- After these 10 minutes, pour the rest of the liquid and take it to the fridge for 4 hours, or until it is completely cold and solidified.
