If there’s one thing I like to eat, it’s roasted veggies, particularly potatoes!
We can roast potatoes in so many ways, whole, in sticks, in cubes, with the skin, without the skin, not to mention the seasonings. Potato is such a versatile tuber that just changing a simple seasoning can completely transform the flavor!
One of the ways I like to roast potatoes is cut into sticks, as if they were French fries. Trust me, they´re amazing! A way to eat “fries” and enjoy the whole experience but in a much healthier version! One of these days I’ll share with you my secrets for crispy and perfect oven fries!
But today, I want to bring a potato that is one of my favorites to make at home! Vegan Roasted Parmesan Potatoes! (as if you haven’t already read the title)

These potatoes are a real delight!
We combine turmeric with black pepper, smoked paprika, salt, a little olive oil and finish with fresh herbs.
Oh! Sure! Vegan Parmesan obviously joins the party in generous amounts.
In this recipe I used Bett’r Vegan Parmesan. An absolutely amazing and delicious plant-based alternative made with only cashew nuts, nutritional yeast and sea salt, all from organic source! An alternative as healthy as it is tasty, which was perfect with these potatoes!
This recipe is quite simple to execute, basically you just need to peel and cut the potatoes, add all the seasonings, mix well and put in the oven.
They are ready in about 30 minutes and ideally should be served while hot, so they don’t lose their crunchiness.
1.200kg of potatoes
2 tbsp of olive oil
2 tsp of turmeric powder
2 tsp of smoked paprika
Salt and black pepper
2 tbsp of Bett´r Vegan Parmesan
Fresh chives and thyme

1- Preheat the oven to 200ºC.
2- Peel the potatoes and cut them into cubes.
3- Place the potatoes in a container and add all the seasonings, except the fresh herbs. Mix well with a spoon or your hands so that all the potatoes are coated in the seasonings.
4- Place the potatoes on the oven tray, previously lined with parchment paper, and put it in the oven for about 30 minutes, and open the oven every 10 minutes to stir the potatoes so that they bake evenly and to prevent it from burn. that are at the ends. Remove from the oven when the potatoes are golden. To be sure the potatoes are baked, carefully remove one from the oven and taste.
5- Remove from the oven and immediately add the chopped fresh herbs on top and extra parmesan.
6- Serve immediately.
